SPINACH SALAD

fresh spinach, broken up
mandarin orange segments (1
can, half each segment)
almond slices or peanut pieces
red onion (sweet), finely
chopped
bacon bits (optional)

Vinegar and Oil Dressing:
1/4 c. vegetable oil
1 Tbsp. lemon juice
2 Tbsp. sugar
2 Tbsp. vinegar
dash of salt
dash of pepper

Place broken up fresh spinach in glass bowl and add the
salad ingredients. Make Vinegar and Oil Dressing and pour on
top, toss and refrigerate for 1 1/2 hours before serving.
Vinegar and Oil Dressing: Shake all dressing ingredi-
ents together.
