ARTICHOKE, SHRIMP AND RICE SALAD

1 pkg. chicken Rice-A-Roni
2 small jars marinated
artichoke hearts (reserve
oil from 1 jar)
8 olives, sliced
1/4 tsp. curry powder
2 green onions, chopped
1/2 bell pepper, chopped
2 cans shrimp, drained
1/3 c. mayonnaise

Prepare rice according to package. Make a dressing from
mayonnaise, curry and oil from 1 jar of artichokes. After rice
is cooked, add remaining ingredients and dressing. Stir well
and chill or serve warm.
