POTATO SOUP

1 large or 2 small potatoes
1/2 medium onion
2 Tbsp. butter
2 Tbsp. flour
2 Tbsp. celery (optional)
1 1/4 c. water
1 1/2 c. milk
2 to 4 strips bacon, cooked

Dice and boil potatoes into 1 1/4 cups water. Saute
diced onion and celery in 2 tablespoons butter. When onion is
tender, stir in 2 tablespoons self-rising flour. (Do not let
it begin to brown. You may need to add more butter.) Add 1 1/2
cups milk and simmer until white sauce begins to thicken. Add
crumbled up fried bacon and potatoes with onion and white
sauce. Salt to taste.
