CARROT SALAD 3/4 c. shredded carrots 3 oz. pkg. softened cream cheese 1 c. crushed pineapple and juice 3/4 c. chopped pecans 1 small pkg. lemon Jell-O Prepare Jell-O as directed on box omitting 1/2 cup water. Add other ingredients. Chill overnight until firm. Serve on lettuce if desired, topped with salad dressing or whipped topping. It is very good plain.
