POTATO SOUP 5 or 6 medium potatoes 1 medium onion 2 stalks celery 2 Tbsp. butter salt and pepper to taste enough water to cover vegetables 1/2 c. milk Dice potatoes, onion and celery into small pieces. Place all ingredients except milk into medium saucepan and bring to boil. Reduce to medium heat and stir often. Cook until vegetables are tender. Add 1/2 cup milk and let set. You can thicken with cornstarch, if desired.
