HOT TACO SAUCE 2 qt. peeled and chopped tomatoes 1 c. chopped onion 1 c. chopped hot peppers 1 clove garlic, sliced 2 1/2 Tbsp. sugar 1 1/2 tsp. dried whole oregano 3/4 tsp. salt 1/2 tsp. ground cloves 1/2 tsp. ground allspice 1/2 tsp. ground cinnamon 1/2 tsp. chili powder 1/2 tsp. cumin seeds 1/2 tsp. pickling spice 3/4 c. vinegar Combine all ingredients in a Dutch oven. Bring to a boil; reduce heat and simmer, uncovered, 1 hour. Cool and store in refrigerator. Yield: 2 1/2 pints. Great Christmas gift.
