TOMATO CHEESE SALAD 8 medium tomatoes 1 lb. or 4 c. American cheese, grated fine 6 chopped sweet pickles 5 hard-cooked eggs, chopped 3 chopped pimentos 12 chopped pecans 3 Tbsp. mayonnaise 12 chopped, stuffed olives lettuce French dressing or your favorite Wash and peel tomatoes; scoop out inside. Sprinkle with salt and pepper inside. Invert on plate and chill. Combine rest of ingredients but lettuce and dressing; fill tomatoes. Serve on lettuce with dressing. To vary: Omit tomatoes; chill cheese mixture in a loaf pan and slice. Serve on lettuce. For 2: Use 1 egg and 1/2 cup cheese; divide each remaining ingredient by 4. Very good!
