COLD RICE AND ARTICHOKE SALAD 1 pkg. Uncle Ben's chicken flavored rice or Rice-a-Roni 2 green onions, chopped 1/2 green bell pepper, chopped 10 or 12 olives with pimentos, chopped 2 (6 oz.) jars marinated artichoke hearts, cut up 1/4 tsp. curry powder 1/3 c. mayonnaise Cook rice as directed, omitting the butter; let cool. Drain artichokes, reserving the marinade liquid. Cut up artichokes and add to rice, then add onion, green pepper and olives. Combine marinade liquid from artichokes with curry powder and mayonnaise. Mix well. Add to rice mixture. Keep cold and serve.
