CHICKEN SALAD DELUXE|
2 c. cooked chicken, cut up
2 tsp. lemon juice
1 c. diced celery
3/4 c. seedless grapes, halved
1 tsp. capers (optional)
3/4 c. toasted, salted,
dash of nutmeg
salt and pepper to taste
Sprinkle lemon juice over chicken and celery. Let
mixture stand at least 1 hour. Mix together lightly with
grapes, almonds, capers, nutmeg, seasonings and mayonnaise.
Pile lightly on lettuce cups. Garnish with a few grapes and
almonds. Serves 4.
