FRESH TOMATO SAUCE

1/2 c. oil (olive)
3 garlic cloves
3 tomatoes, peeled and chopped
1 1/2 tsp. salt
oregano
basil
1 tsp. sugar (more or less,
depends on tomatoes
ripeness)

Note: This tops 1 pound spaghetti.
Saute garlic and oil in frying pan until gold. Add
tomatoes (peeled and chopped). Add remaining spices. If fresh
taste of tomatoes is desired, simmer 5 minutes only on high
heat, uncovered. Pour over cooked, white spaghetti.
