MELON-CUCUMBER SALAD

1/2 c. vegetable oil
1/4 c. lemon juice
1 tsp. sugar
1/2 tsp. salt
dash of freshly ground pepper
crisp salad greens
6 c. (3/4-inch pieces) melon
(honeydew, cantaloupe,
watermelon)
3 medium cucumbers, thinly
sliced

Mix oil, lemon juice, sugar, salt and pepper in tightly
covered container. Toss with melon and cucumbers. Cover and
refrigerate no longer than 8 hours. Drain. Serve on salad
greens.
