GOURMET SOUP (White Turkey Inn) 1/2 stick butter 1 bunch scallions 5 celery sticks 4 grated carrots 3 cans cream of potato soup 4 cans water 3 chicken bouillon cubes 1 tsp. fresh chopped parsley 3 Tbsp. sherry or white wine 4 drops Tabasco sauce 8 oz. sour cream 8 oz. grated Cheddar cheese Melt butter in large kettle. Chop fine the scallions, celery sticks and grated carrots. Saute until softened. Add the cans of soup, four cans of water and the bouillon cubes. Stir and simmer until dissolved. Then add the parsley, sherry or white wine and Tabasco sauce. Cover and cook over low heat until blended. Add the sour cream and cheese. Continue to cook until the cheese is melted. Serves about 8 to 10.
