TURKEY GUMBO

2 small onions, diced
2 Tbsp. fat
4 c. turkey broth*
2 c. canned tomatoes
4 c. cooked okra
2 c. cooked turkey
2 Tbsp. parsley
1/2 tsp. paprika
2 c. cooked rice

*Broth: Add to turkey carcass 1 small carrot, onion,
clove of garlic, celery leaves, parsley or a bay leaf. Simmer
2 hours.
Cook onion in fat until tender, but not brown. Add
broth, tomatoes, okra, turkey, parsley and paprika; simmer 10
minutes. Add cooked rice. Heat and serve.
