POTATO SALAD

12 potatoes, diced
2 medium onions, chopped
almonds, chopped
1/2 c. parsley
1 tsp. salt
1 tsp. paprika
1 tsp. pepper
8 Tbsp. oil, salad
6 Tbsp. vinegar
3 Tbsp. butter
1 tsp. salt
1 tsp. dry mustard
3 egg yolks
1 c. hot milk

Cook potatoes; dice. Put the following in a jar and
shake well: salt, paprika, pepper, oil and vinegar. Put the
following in a double boiler: butter, salt, dry mustard, egg
yolks and milk. Stir and mix well until thickened. Mix with
ingredients in jar. Pour over the potatoes, onions and al-
monds; chill.
