BEAN SOUP 1 lb. dry beans 2 qt. cold water 1 ham bone 1/2 tsp. salt pepper to taste 1 bay leaf (optional) 1 small onion Wash beans then add water. Soak overnight. Add one ham bone, salt and pepper. If desired, add bay leaf. Cover and simmer slowly, about 3 or 3 1/2 hours. Add onion about 1 hour before done. Mash, if desired.
