FRENCH ONION SOUP

6 medium onions, sliced
1/2 stick butter
dash of nutmeg
2 Tbsp. white wine or sherry
7 c. strong beef broth*
shredded Swiss cheese**
French bread slices, toasted

Saute onions in butter; add nutmeg and beef broth.
Simmer for 1/2 hour; add wine; simmer 10 minutes more. Place
in individual crocks; place toasted bread on soup; sprinkle
shredded cheese (about 4 tablespoons) on top. Place in oven
under broiler until hot and cheese is bubbly.
*For beef broth, may use 1 bouillon cubes per cup.
**May substitute Mozzarella cheese for Swiss.
