GOURMET CHICKEN SALAD

1/2 c. whipping cream
2 1/2 c. cooked, chopped
chicken
1 c. chopped celery
1 c. white grapes, halved and
seeded
2 Tbsp. parsley
1 tsp. salt
1 c. mayo (not salad dressing)
1/2 c. shredded almonds,
browned

Whip cream and add remaining ingredients. Refrigerate
for 2 hours. Serve on a lettuce bed with garnishes of cherry
tomatoes, egg halves and olives.
