FROZEN WALDORF SALAD 2 eggs, slightly beaten 1/2 c. sugar 1/2 c. pineapple juice 1/4 c. lemon juice 1/8 tsp. salt Cook all ingredients over low heat until thick, stirring constantly. Cool. 1/2 c. diced celery 1/2 c. drained, crushed pineapple 2 medium apples, diced and unpeeled 1/2 c. chopped English walnuts 1 c. whipping cream, whipped Add celery, fruits and nuts to cooked dressing. Fold in whipped cream. Spoon into 8-inch square pan and freeze. Note: I use a quart milk carton to freeze mine in, as it doesn't take up so much room in freezer and is easy to slice. I also, use Dream Whip for the whipped cream. So nice to have in freezer for unexpected company and will keep indefinitely.
