APPLE CINNAMON SALAD 6 apples, pared and cored 1/2 c. red cinnamon candies 1/4 c. sugar 2 Tbsp. pecans, broken 10 dates, pitted and chopped 1/2 c. crushed pineapple, drained 1/4 c. mayonnaise grated cheese Dissolve candies and sugar in water over low heat. Add whole apples and cook slowly until transparent, but not soft (water should be deep enough to cover apples). Chill the apples. Combine remaining ingredients and stuff into core of the apples. Serve on lettuce. Garnish with small amount of grated cheese, if desired.
