MANDARIN ORANGE SALAD AND DRESSING 2 heads red lettuce or regular 1/2 c. chopped celery 1/3 c. chopped green onions 1/2 c. chopped watercress sprigs 1/4 c. chopped parsley 1/2 c. chopped pecans 1 avocado, sliced 1 (11 oz.) can mandarin orange slices, drained Dressing: 1/2 c. olive oil 1/4 c. tarragon vinegar 2 Tbsp. sugar 1 tsp. salt 1/2 tsp. Worcestershire sauce freshly ground pepper to taste dash of Tabasco sauce (optional) Wash, drain and pat dry. Mix with all other salad ingredients. Mix dressing ingredients in order given: olive oil, tarragon vinegar, sugar, salt, Worcestershire sauce, ground pepper and Tabasco sauce, blending well. Pour over salad ingredients.
