SAUERKRAUT SALAD 3 c. sauerkraut, chopped 1/2 c. sugar 1 1/2 c. chopped celery 1 1/2 c. chopped carrots 1/4 c. chopped onions 1 Tbsp. chopped pimiento (optional) Mix all ingredients and chill 12 hours. Serves 6. To make a delicious congealed salad: Mix 1 (3 ounce) package of lemon flavor gelatin with one cup hot water and 3/4 cup cold water. Chill until thick (about the consistency of an egg white). Drain the kraut salad well and fold into gelatin. Chill until firm. Cut or scoop onto lettuce and garnish with mayonnaise. Serves 10.
