EASY POTATO SALAD

4 to 5 lb. potatoes
2 medium onions, chopped
mayonnaise to taste
basil (freshly opened jar)

Boil potatoes, keep checking. Remove from water as get
soft enough for sharp knife to go all the way through. Peel
potatoes, cut into bite-sized pieces, once cool, add onion and
basil. Usually takes about 1/4 jar of basil. Add mayonnaise
to coat potatoes, mix well. Store in refrigerator. Recipe
does not call for salt. May be added if desired.
