PRESSED SALAD

1 head lettuce, torn in small
pieces
handful of dried onion flakes
1 green pepper, chopped
2 stalks celery, chopped small
1 pkg. frozen peas, cooked
until barely tender
1/2 lb. fried bacon, broken up
mayonnaise
1/2 lb. grated Cheddar cheese

Spread lettuce in large bowl and press. Add green
pepper, onion flakes, celery and peas and press. After layer-
ing and pressing frequently and firmly, spread the mayonnaise
over the top and seal well to the sides. Sprinkle Cheddar
cheese and bacon bits. Refrigerate overnight. Keeps well for
2 days of serving and is amazingly delicious. Serves 6 to 8.
