RICE SALAD 2 c. rice cooked in 5 c. chicken broth 2 (6 oz.) jars marinated artichokes, strained 1 (4 oz.) jar stuffed green olives, strained 1 large green pepper, diced 1 large red onion, diced 3 celery stalks, diced 1/4 c. fresh parsley 1 tsp. curry powder 2 c. mayonnaise salt and pepper to taste Mix rice; let cool. Mix in all other ingredients. Good for a picnic or barbecue.
