SCUNGILLI SALAD

1 can LaMonica brand scungilli
celery stalk and leaves
fresh garlic
1 lemon
fresh parsley
olive oil
crushed red pepper flakes

Rinse scungilli under cold running water until water is
clear. Cut scungilli into small pieces removing any soft
pieces or tails. In a large bowl mix together cut up
scungilli, cleaned and diced celery leaves and stalks, chopped
parsley, diced garlic and juice of one lemon. Drizzle with
olive oil and add crushed pepper flakes to taste (optional).
Toss and refrigerate for at least one hour before serving.
Serve as an appetizer or side dish.
