BASIC CHEESE SAUCE

2 c. (1 lb.) low-fat cottage
cheese
2 Tbsp. lemon juice
1/4 c. skim milk
salt to taste

Place all ingredients in a blender jar. Blend until
creamy, adjusting the milk measure to produce the desired
consistency. This recipe can be used as a basis for an infi-
nite number of dips, spreads and dressings. It is also a
delicious replacement for sour cream.

Variations:
Horseradish Dressing: Add 1 tablespoon prepared horse-
radish.
Herbed Green Dressing: Add these ingredients:
1/4 c. fresh parsley, chopped
1/4 c. watercress, chopped
2 Tbsp. chopped green onion
1 Tbsp. mayonnaise
1 tsp. Worcestershire sauce
Onion-Dill Dressing: Add the following ingredients:
2 Tbsp. fresh dill, snipped
2 Tbsp. finely minced onion
Yield: 2 cups
