LOW CALORIE ROCKY ROAD CHEESE-FRUIT WHIP

1 envelope low calorie lime
flavored gelatin
3/4 c. 2% cottage cheese
1 (4 1/2 oz.) carton frozen
whipped topping, thawed
1 drop green food coloring
(optional)
1 c. honeydew melon balls
1 (8 oz.) can crushed
pineapple, unsweetened,
drained
mint leaves for garnish

Sprinkle gelatin on cottage cheese to soften. Stir in
and let stand a few minutes. Stir again until gelatin is
dissolved. Fold in whipped topping, food color and fruits.
Cover and refrigerate until serving time. Divide among 6
dessert dishes and garnish with mint leaves. Yields 6 serv-
ings, 125 calories each.
