CURRIED CHICKEN AND FRUIT SALAD 3 c. cubed chicken 1/4 c. bottled oil and vinegar dressing 2 c. pineapple chunks 1 1/2 c. diced apple 1 1/2 c. seedless grapes 1/4 c. chutney Curry Mayonnaise: 1/2 c. mayo 1 Tbsp. chopped preserved ginger 2 tsp. curry powder 1 tsp. grated onion 1/2 tsp. salt 1/2 c. heavy cream, whipped Make Curry Mayo: In small bowl combine mayo, ginger, curry, onion and salt; mix. Fold in whipped cream. Refriger- ate. Combine chicken, oil and vinegar dressing. Toss until coated. Refrigerate covered 2 hours. Add pineapple, grapes, apple and chutney to chicken. Fold in Curry Mayo. Refrigerate at least 2 hours. Serve on lettuce leaf, with a fruit bread with butter.
