HOT POTATO SALAD 4 slices bacon, diced 1/2 c. vinegar 1/2 c. water 4 Tbsp. sugar 1 tsp. mustard 1 Tbsp. flour in 3 Tbsp. cold water 4 steaming hot potatoes 1 medium onion, chopped 2 Tbsp. parsley, chopped 2 tsp. salt 1/4 tsp. black pepper Fry bacon until crisp. Set aside. Blend flour paste to drippings. Add vinegar, water, sugar and mustard to drippings. Bring to a boil. Slice hot potatoes into a bowl; sprinkle with onion, parsley, salt, pepper and finely diced bacon. Pour hot vinegar mix over potatoes. Toss carefully with a fork. Serve hot. Makes 4 to 6 servings.
