LITHUANIAN BEET SOUP

about 2 lb. pork
4 to 5 beets
1 c. heavy cream
salt and pepper to taste

Boil pork until tender. At same time in another pot,
boil beets, enough to remove skins, then boil beets until
tender. Remove piece of pork from broth. Remove beets from
water. Add beet juice (water) to broth. Bring mixture to
boil. Remove from fire and add cream, salt and pepper to
taste. Soup should be rose pink.
