HOT GERMAN POTATO SALAD

6 medium-sized potatoes
6 slices bacon
1/3 c. bacon fat
3/4 c. chopped onion
2 Tbsp. flour
1 to 2 Tbsp. sugar
1 1/2 tsp. salt
1/2 tsp. celery seed
dash of pepper
3/4 c. water
1/2 c. vinegar

Boil potatoes in skins. Peel and slice thinly. Fry
bacon until crisp. Cook bacon fat containing chopped onion
until yellow. Mix in flour, sugar, salt, celery seed and
pepper. Gradually stir in water and vinegar. Cook, stirring
until mixture boils. Boil 1 minute. Pour over potatoes.
Add crisp bacon, broken into pieces. Cover and let
stand until ready to serve. Heat over hot water. Serve
garnished with pieces of crisp bacon and minced parsley or
chives.
