CANLIS SALAD

1 clove garlic
5 Tbsp. olive oil
1 lb. bacon, chopped
2 tomatoes, peeled and
quartered
2 heads romaine lettuce
1/2 c. grated Romano/Parmesan
cheese
1 c. croutons
3 green onions, chopped
1/2 tsp. chopped fresh mint
1/4 tsp. oregano
3 Tbsp. lemon juice (fresh)
1 tsp. pepper
1/2 tsp. salt
1 egg

Add garlic to oil and let stand several hours. Fry
bacon and drain well. Place tomatoes and romaine lettuce in
salad bowl. Sprinkle with cheese, onions, mint and oregano.
In a separate bowl combine oil, lemon juice and seasonings.
Boil egg 1 minute, then add and beat into dressing. Pour
dressing over greens and croutons. Toss. Yields 6 servings.
Note: A dressy salad for a special occasion.
