8 LAYER SALAD 1 head lettuce 1 c. chopped celery 1 c. sliced onion, chopped 1 c. sliced water chestnuts 1 pkg. frozen English peas 1 pt. mayonnaise 1 tsp. sugar 1 tsp. salt 1/4 tsp. pepper Mozzarella cheese (4 oz.) 1/2 c. Parmesan cheese Shred lettuce on bottom of Pyrex dish. Layer celery, onion, water chestnuts and frozen English peas that have been cooked, drained and cooled. Spread pint of mayonnaise over layers. Make a mixture of sugar, salt and pepper. Sprinkle over mayonnaise. Top with Mozzarella cheese and Parmesan cheese. Seal with Saran Wrap overnight. Store in refrigera- tor. Top with cherry tomatoes, bacon chips and parsley.
