ORANGE SALAD CUPS

6 medium oranges
1 banana, halved and sliced
1 apple, peeled and sliced
1 c. miniature marshmallows
1/3 c. seedless green grapes,
halved
1/3 c. seedless red grapes,
halved
1 (8 oz.) carton sour cream,
divided
2 Tbsp. honey
additional red grape halves
Boston lettuce leaves

Cut oranges in half crosswise. Clip membranes and
carefully remove pulp. Using kitchen shears, cut edges of
orange cups into scallops. Dice orange pulp. Drain. Combine
orange pulp, banana, apple, marshmallows and grapes in a medium
bowl. Combine 1/4 cup sugar and honey. Mix well. Stir in
remaining sour cream. Combine fruit mixture and 3/4 cup sour
cream mixture. Toss gently. Stuff each orange cup with fruit.
Garnish tops with remaining sour cream mixture and red grape
halves. Place orange cups on a platter lined with Boston
lettuce leaves. Yield: 12 servings.
