LENTIL-N-BULGUR SALAD

1 1/2 c. boiling water
1 1/2 c. medium grain bulgur
1 1/2 c. lentils
5 1/2 c. water
1 1/2 c. minced fresh mint
1 1/2 c. minced onions
1 1/2 c. sliced mushrooms
1 1/2 c. sliced radishes
5 carrots, peeled and sliced
thin
1 red bell pepper, diced
1 green bell pepper, diced
3/4 c. red wine vinegar
3 Tbsp. minced fresh dill
3 Tbsp. minced fresh basil
1 tsp. salt
fresh ground pepper
1 1/2 c. cubed Feta cheese

Pour water over bulgur; soak 30 minutes. Simmer lentils
in 5 1/2 cups water for 25 minutes. Drain bulgur and lentils;
transfer to bowl. Add all ingredients, except cheese. Toss
and top with cheese. Serve at room temperature.
