LOVELY ONION SOUP 1 Tbsp. unsalted butter or margarine 1 Tbsp. oil 6 medium sized onions, slice into rings black pepper to taste 2 Tbsp. dry sherry 1 tsp. mustard powder 7 1/2 c. boiling water, divided 7 1/2 Tbsp. low sodium beef bouillon 1/2 c. dry white wine 1/2 tsp. thyme 2 1/2 slices low sodium bread, toasted and cut into 10 triangles 5 oz. low sodium Cheddar cheese, cut into 10 thin triangles In large saucepan heat butter and oil. Add onion rings. Sprinkle with pepper. Cover and simmer over low heat 25 minutes or until onions start to brown, stirring regularly. Add sherry, mustard powder and 1/2 cup boiling water. Stir to blend. Simmer 15 minutes. Stir in bouillon, remaining 7 cups water and wine. Cover and simmer 30 minutes. Stir in thyme. Top each toast triangle with slice of cheese. Place on shallow baking sheet and broil 2 minutes or until cheese starts to bubble. Pour soup into 10 bowls. Top with toast. Calories per serving: 162. Sodium per serving: 33 mg. Serves 10.
