APPLE-CHEESE SALAD MOLD

2 (3 oz.) pkg.Jell-O Brand
raspberry flavor gelatin
1 3/4 c. boiling water
2 c. ice cubes
1 medium apple, chopped (about
1 c.)
1/4 c. diced or sliced celery
(optional)
3/4 c. cold water
1 (8 oz.) pkg. cream cheese,
softened

Dissolve 1 package gelatin in 3/4 cup of the boiling
water. Add ice cubes and stir constantly until gelatin begins
to thicken, 3 to 5 minutes. Remove any unmelted ice. Add
apples and celery and pour into 5-cup ring mold. Chill until
set, but not firm. Dissolve remaining gelatin in remaining
boiling water. Add cold water. Then blend gradually into
cream cheese, stirring until smooth. Pour into mold over clear
gelatin. Chill until firm, about 3 hours. Unmold. Serve with
crisp salad greens and apple slices, if desired. Makes about
4 1/2 cups or 8 or 9 servings.
