SOUPA AVGOLEMONO (Makes 4 To 6 Servings) 1 qt. chicken broth or stock 1 oz. rice 1 egg 1 oz. lemon juice 6 tsp. chopped chives 6 Tbsp. chopped chicken salt and pepper to taste Bring stock to a boil, add rice and cook until rice is almost tender. Remove from heat. Combine eggs, lemon juice and seasonings. Temper egg mixture, then add to soup. Whip well. Adjust seasonings. Can be served hot or cold. Before serving, add 1 tablespoon of chicken and 1 teaspoon chopped chives to each soup serving.
