CRABMEAT WEST INDIES 1 lb. lump crabmeat 1 medium onion, chopped fine 1/3 c. tarragon vinegar 1/4 c. ice water 1/4 c. olive oil garlic salt and pepper to taste In a large bowl layer 1/2 onion, crabmeat and repeat. Add garlic salt and pepper. Pour tarragon vinegar, ice water and oil over crabmeat and onion. Set aside 2 hours and toss.
