NAVY BEAN SOUP 2 c. dried navy beans 1 c. diced salt pork 1/2 c. diced onion 1 carrot, sliced thin 1 c. diced potatoes 1 c. milk Pick and wash beans. Soak overnight and drain. In a heavy pot, cook pork over moderate heat until golden brown. Add beans and enough water to cover. Reduce heat. Simmer about 2 hours or until beans are tender. Add carrots, potatoes and seasonings. Cook over moderate heat about 30 minutes longer. Add milk, adjust seasonings and bring to boil. Note: I cooked mine with a ham bone. Was delicious with cornbread.
