BASIC CHEESE SAUCE

2 c. (1 lb.) lowfat cottage
cheese
2 Tbsp. lemon juice
1/4 c. skim milk
salt to taste

Use this basic recipe with variations as a dip, a
spread, a salad dressing or a delicious replacement for sour
cream. Place all ingredients in a blender. Blend until
creamy, adjusting the milk. Measure to produce desired consis-
tency. Yield: 2 cups. Chill for a few hours or overnight.
Can stuff celery.
Blue Cheese: Add 1 or 2 tablespoons of crumbled Blue
cheese and 1/4 teaspoon Worcestershire sauce.
Dill: Add 1 tablespoon chopped, fresh dill and 1
tablespoon minced onion, Beau Monde seasoning for dip.
