ARTICHOKE RICE SALAD

1 pkg. chicken Rice-A-Roni
2 jars marinated artichoke
hearts
1/2 green pepper, chopped
8 to 10 stuffed green olives,
chopped
1/2 to 1 tsp. curry powder
1/3 c. mayonnaise
salt and pepper to taste
1 can shrimp or chicken, if
desired

Chop artichokes and save the oil from 1 of the jars.
Set aside. Prepare the Rice-A-Roni according to package
directions. Add remaining ingredients including artichoke
hearts and oil. Refrigerate. Serves 6.
