CURRY RICE SALAD

1 c. raw rice, cooked in
chicken broth and chilled
8 green onions
1/2 green pepper, chopped
18 sliced green olives
1 jar marinated artichoke
hearts, chopped

Dressing:
1/3 c. mayonnaise
3/4 tsp. curry powder
juice from artichokes

Toss rice, onions, green pepper, olives and artichokes.
Mix dressing in small bowl and pour over rice and vegetables.
Chill.
