VEGETABLE SOUP 1 onion, sliced 2 Tbsp. butter 1 c. carrots, diced 1 c. potatoes, diced 1 c. celery, diced 1 c. cabbage, shredded 1 c. peas 1/2 c. corn 5 c. boiling water 1/2 c. tomato juice 1 Tbsp. salt 1/4 tsp. pepper Add onion to butter and brown in small skillet. Add vegetables to boiling water and strained tomato juice. Add browned onions and other seasonings. Let simmer 1 hour or put in crock-pot on low for 7 to 8 hours. For vegetable meat soup, add 1 pound chopped beef tips.
