BROCCOLI SOUP

1 c. minced onion
2 celery stalks
2 to 3 c. fresh broccoli
4 c. chicken stock
3 tsp. flour
1 1/2 c. light cream
1/2 c. water

Simmer vegetables in chicken stock. Stir flour and
water until smooth. Strain and add to soup. Cook, stirring
constantly, until soup comes to a boil. Take off heat. Add
cream. Salt and pepper to taste.
