MARINATED VEGETABLE SALAD 1 c. sugar 1 c. Italian-style cooking sauce 1 c. vinegar 1/2 c. salad oil 1/4 c. water 2 tsp. salt 1/2 tsp. pepper 6 carrots, sliced (3 c.) 2 medium cucumbers, sliced 1 small green pepper, cut into rings and halved 1 medium onion, sliced and separated in rings For marinade, in large bowl combine sugar, cooking sauce, vinegar, oil, water, salt and pepper. Stir in carrots, cucumbers, green pepper and onion to coat. Cover; chill several hours or overnight, stirring occasionally. Drain vegetables; serve in lettuce lined bowl, if desired. Makes 8 servings. Refrigerate the marinade you drain from the vegetable mixture and use it to marinate another batch of salad.
