MEDITERRANEAN SALAD

butter lettuce
Roma tomatoes
red bell pepper
cottage cheese
hard cooked eggs
pitted ripe olives
herb vinaigrette

Arrange lettuce leaves on plate, top with sliced toma-
toes and julienned bell pepper. Place a hefty dollop of
cottage cheese either in the middle or along side. Arrange
sliced eggs here and there. Garnish with a few olives.
Vinaigrette: A combination of your favorite fresh
chopped herbs (I use chives, garlic cloves and basil), olive
oil, red wine vinegar and white pepper. Add a little water for
a lighter dressing.
