CREAM OF BROCCOLI SOUP

1 small onion, chopped or in
small strips
3 to 4 c. broccoli, chopped
2 c. chicken stock
dash of curry or chili powder
1 c. Ricotta cheese
1 c. skimmed milk

Saute the onion in a tablespoon of oil. Add broccoli,
and stir-fry until just done. Then add chicken stock, curry or
chili powder and heat through. Meanwhile, mix Ricotta cheese
and skim milk in a blender. Stir this cream mixture into the
soup and heat until warm. Serve with lemon slice garnish and
sprinkle of paprika, or garnish with parsley.
