IRISH YELLOW PEA SOUP

3 1/3 c. whole yellow peas (or
whatever you get in 1 pkg.)
1 1/2 lb. more or less from a
good ham, cubed
1 good size carrot, shredded
4 or 5 (some like only 3)
onions, chopped
salt and pepper to taste
(careful on salt if ham is
salty)

Cook peas, onions and carrots 1 hour and 12 1/2 minutes
in large pot, in enough water to cover peas 3 1/2-inches, at
low boil. Add ham and continue cooking until peas soften. Do
not overcook until peas break apart. Serves 7. Add more water
if more people show up.
