MAKE-AHEAD SALAD

3/4 c. wine vinegar
1/2 c. olive oil
1/4 c. water
1 Tbsp. sugar
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1 small head cauliflower
2 carrots
1 or 2 green peppers
2 stalks celery
1/4 lb. fresh mushrooms
3 oz. black olives, pitted
3 oz. stuffed olives
1 small jar pimiento
1 sweet red pepper, if
available

Combine all cut vegetables into large pan, add vinegar,
olive oil, water and seasonings. Bring to boil. Boil 5
minutes. Remove and let cool. Refrigerate at least 24 hours.
Drain liquid before serving.
